Vegan Chocolate Covered Peanut Clusters

If you go to the grocery store and look at the nutrition label of every item with chocolate, 90% of them will say “contains milk”. That is why finding a dairy-free chocolate product is so hard, but I have some good news that may make your search easy. When the percentage of cacoa is above 55%, the higher the chance that you just found yourself vegan chocolate (I still recommend that you check the nutrition label, because some brands will add milk to dark chocolate products). I had a craving for chocolate covered peanut clusters, so I found vegan dark chocolate chips and created the perfect dairy-free dessert that makes pleasure not so guilty afterall.

  • 1 bag of dairy-free dark chocolate chips (Trader Joe’s brand)
  • 12 tbsp. of peanuts
  • 1/4 cup of almond milk (add less if necessary)
  • Aluminum foil or parchment paper

Step 1: Place the dark chocolate chips into a heat-safe bowl

Step 2: Measure 1/4 cup of almond milk and place it in the bowl with the chocolate chips.

Step 3: Heat it in the microwave and stir it every 30 second increment until it is a smooth but thick consistency so that it hardens.

Step 4: Place 12 seperate 1 tbsp. clusters of peanuts on a cookie sheet with aluminum foil (preferably parchment paper).

Step 5: Cover each cluster with the melted chocolate.

Step 6: Once each of them are covered, place in the freezer overnight until the chocolate hardens.
