High-Fiber Vegetable Spaghetti (115 grams in one pot)

Fiber is a daily essential and sometimes it can be tough to get a sufficient amount in your diet so I created this quick 30 minute entree that contains 115 grams of fiber per pot.

Ingredients

  • 2 lbs. of SmartTaste spaghetti
  • 5 cups of kale and spinach mix
  • 1 lb. of mushrooms
  • 2 lbs. of cauliflower
  • 5 cups of tomato sauce
  • 4 jalapeños 
  • 3 tbsp. of minced garlic
  • 2 tsp. of cayenne pepper
  • 2 tsp. of basil leaves
  • 2 tsp. of dried thyme
  • 2 tsp. of dried cilantro
  • 3 tbsp. of olive oil

Directions

Step 1: Cook The Spaghetti

Boil a pot of water. Once it reaches a boil, add the spaghetti noodles and allow that to cook until the noodles soften. Then, drain the water from the noodles and pour that back into the pot. 


Step 2: Sauté the vegetables

Heat 3 tbsp. of olive oil and 2 tbsp. of water for 3-4 minutes on medium heat. Add the spinach and kale, mushrooms, diced jalapeños, and minced garlic into the pot. Allow that to cook for 6-8 minutes. 


Step 3: Add the Cauliflower & Seasoning

Cut the cauliflower florets into halves and add them into the sautéed vegetables along with the basil, cayenne pepper, thyme, and cilantro. Allow that to cook for 10-12 minutes. 


Step 4: Mix the Vegetables & Noodles

Mix one scoop of the sautéed vegetables at a time into the pot of noodles. 


Step 5: Add the tomato sauce into the pot and serve. (Optional: Garnish with Bay leaves)
