Most burgers are good to you but not good for you…but not this one! This Super Green Chickpea Burger is delicious and nutritious! It’s also quick to make! Try it out and tag me on Instagram @TheBJanai when you make it!
- 1 can of chickpeas
- 1 cup of spinach (fresh/frozen)
- 1/2 cup of corn
- 1/2 cup of carrots
- 1/2 cup of almond milk or coconut milk
- 1 diced jalapeño
- 1/2 diced onions
- 1/2 bunch of cilantro
- 1 tsp of cayenne pepper
- 2 tsp of garlic powder
- 2 cups of rolled oats or regular oats (not instant)
- Feel free to add additional veggies in your patty! Make it your own and load it up!
Step 1: Place all of the ingredients (EXCEPT the oats) in a blender and blend until you form a smooth green consistency.
Step 2: Pour the green mixture in a large bowl. Then, mix in the oats.
Step 3: Let the mixture sit for 10-15 minutes so the oats can soak into the green mixture.
Step 4: Heat a skillet with 2 tbsp. olive oil on high heat. Once it is heated, drop the heat to medium heat. Then, use a large kitchen spoon and drop one big scoop of the mixture onto the skillet. Drop 4 scoops on one skillet to make 4 patties like below. Allow the patties to cook to your liking until they are browned. Recommended: 5-8 minutes on each side.
